Easy Vegan Black Bean Meatballs Recipe - These delicious 'meatballs' make for the perfect quick, easy and delicious dinner!

If you happen to have read this old blog post of mine , or you've cooked a few of my recipes in the past, then you'll probably know by now that I like to eat whatever I want - provided it's 100% cruelty-free. So, with that in mind, it'll come as no surprise that I cook this Easy Vegan Black Bean Meatballs Recipe quite often... It might even be one of the vegan recipes I cook the most!

They're just so easy to make and so tasty to eat, and if you make too many then taste great in a sandwich as well!

I hope you will enjoy this recipe - it's fairly simple when it comes to the ingredients. Let me know how yours turned out in the comments section below!

    Vegan 'Meatballs'

What you'll need to make this Easy Vegan Black Bean Meatballs Recipe

    Ingredients

    • Red kidney beans
    • Medium onion
    • Mushrooms
    • Aminos liquid (or soy sauce)
    • 1/4 tsp thyme
    • 1/4 tsp liquid smoke
    • 1/4 tsp smoked paprika powder
    • 5 Tbsp flour (use gluten-free option if desired)
    • Oil
    • Salt & pepper to taste

    Equipment

    • Blender

Looking for a new blender? Then why not check out the range from Greenis? Not only do they have a great selection of fantastic blenders, but by buying through my affiliate link, you’ll be supporting my content!

How to make these Black Bean Vegan Meatballs

To start with you'll want to chop your onion and washed mushrooms before frying them until the onion softens and turns translucent.

Next, drain your tin of red kidney beans and place them in your blender with the rest of your ingredients, including the chopped onions and mushrooms. If you don't have a blender, then you can put everything in a bowl and use a hand blender to mix everything together - which, if I'm honest is the way I prefer to do it.

Once your ingredients are nicely blended, fold your flour into the mix and shape the mixture into individual 'meatballs' with your oiled hands.

If you're looking to make a low-calorie option, place your meatballs into an ovenproof dish and bake at 200ºC for 20 minutes. Otherwise feel free to fry them in a little oil in the same pan you fried your onions and mushrooms with.

Pro Tip: If you do fry your meatballs, I'd suggest covering them with a lid to stop the oil from spitting too much.

Once they're cooked, there are many different ways to serve your meatballs. You could put them in a sandwich or pair them with some spaghetti and tomato sauce (like I did in the photo above!)

    Description

These delicious 'meatballs' make for the perfect quick, easy and delicious dinner!

    Ingredients

    Scale
    • 1 tin of red kidney beans, drained
    • 1/2 medium onion
    • oil for frying
    • 75g mushrooms
    • 2 Tbsp Aminos liquid (alternatively use soy sauce)
    • 1/4 tsp thyme
    • 1/4 tsp liquid smoke
    • 1/4 tsp smoked paprika powder
    • 5 Tbsp flour (use gluten-free option if desired)
    • salt & pepper to taste

    Instructions

    1. Chop the onion and washed mushrooms and fry these shortly in a little oil until the onion begins to soften and become translucent.
    2. Drain the red kidney beans and add them to a blender alongside the rest of the ingredients & the onion.mushroom mix. Alternatively you can add everything to a bowl and puree with a stick blender (this is my preferred option to be honest)
    3. Fold the flour into the mixture and with your oiled hands create the 'meatballs'
    4. For the low-calorie option add the balls to an ovenproof dish and bake at 200ºC for about 20 minutes. Alternatively, heat a little oil in your pan and fry the 'meatballs' in your pan. I would advise using a pan with a lid for this, as the oil can splash during the frying period.
    5. These 'meatballs' are great on a sandwich but also amazingly paired with Spaghetti & tomato sauce - like I did in the image above. But most importantly: enjoy!
