How to make Black Bean Vegan Meatballs
To start with you'll want to chop your onion and washed mushrooms before frying them until the onion softens and turns translucent.
Next, drain your tin of red kidney beans and place them in your blender with the rest of your ingredients, including the chopped onions and mushrooms. If you don't have a blender, then you can put everything in a bowl and use a hand blender to mix everything together - which, if I'm honest is the way I prefer to do it.
Once your ingredients are nicely blended, fold your flour into the mix and shape the mixture into individual 'meatballs' with your oiled hands.
If you're looking to make a low-calorie option, place your meatballs into an ovenproof dish and bake at 200ºC for 20 minutes. Otherwise feel free to fry them in a little oil in the same pan you fried your onions and mushrooms with.
Pro Tip: If you do fry your meatballs, I'd suggest covering them with a lid to stop the oil from spitting too much.
Once they're cooked, there are many different ways to serve your meatballs. You could put them in a sandwich or pair them with some spaghetti and tomato sauce (like I did in the photo above!)

Easy Vegan Black Bean Meatballs Recipe
Ingredients
- 1 tin of red kidney beans drained
- ½ medium onion
- oil for frying
- 75 g mushrooms
- 2 tablespoon Aminos liquid alternatively use soy sauce
- ¼ teaspoon thyme
- ¼ teaspoon liquid smoke
- ¼ teaspoon smoked paprika powder
- 5 tablespoon flour use gluten-free option if desired
- salt & pepper to taste
Instructions
- Chop the onion and washed mushrooms and fry these shortly in a little oil until the onion begins to soften and become translucent.
- Drain the red kidney beans and add them to a blender alongside the rest of the ingredients & the onion.mushroom mix. Alternatively you can add everything to a bowl and puree with a stick blender (this is my preferred option to be honest)
- Fold the flour into the mixture and with your oiled hands create the 'meatballs'
- For the low-calorie option add the balls to an ovenproof dish and bake at 200ºC for about 20 minutes. Alternatively, heat a little oil in your pan and fry the 'meatballs' in your pan. I would advise using a pan with a lid for this, as the oil can splash during the frying period.
- These 'meatballs' are great on a sandwich but also amazingly paired with Spaghetti & tomato sauce - like I did in the image above. But most importantly: enjoy!
