    • Frozen peas - Always have a bag in your freezer for easy use. They are just as nutritious as fresh peas.
    • Curly kale - Look for bright, firm leaves. Remove the tough stems before use.
    • Vegetable stock - Choose a good quality stock for the best flavor, or make your own if you have time.
    • Vegan cream - Available in most supermarkets, but you can also use coconut milk for a slightly different flavor.
    • Salt and pepper - To taste. Always season your soup at the end of cooking.
    • Olive oil - Use a good quality olive oil for sautéing. It adds a nice flavor to the soup.

Scroll to the recipe card at the bottom of the post for detailed quantities and measurements.

    🔪 Equipment

Here is all the equipment you need to make this recipe:

    • Large Saucepan: Choose one that's deep enough to hold all the soup.
    • Stirring Spoon: Ideally wooden, to stir the ingredients while cooking.
    • Hand Blender: Necessary to blend the soup until it's smooth. You can also use a stand blender, but be careful when transferring hot liquids.
    • Measuring Cups and Spoons: For accurate measurements of the ingredients.
    • Knife: To cut the kale into small pieces.

    🧑‍🍳 Instructions (Step-by-Step)

Step 2 - Saute Kale Heat olive oil in a large saucepan and saute the kale until it begins to wilt.

Step 3 - Add Peas and Stock Add frozen peas and vegetable stock to the pan and bring the mixture to a simmer.

Step 4 - Cook Cook the mixture for 10-15 minutes until the peas are tender.

Step 5 - Blend Use a hand blender to blend the soup until it reaches your desired texture.

Step 6 - Add Cream and Season Stir in the vegan cream and season the soup with salt and pepper to taste.

Step 7 - Heat and Serve Heat the soup for another 2-3 minutes, then serve hot with a side of crusty bread.

    🍽️ Serving

Enjoy this soup hot, right off the stove. You can garnish it with some fresh herbs like parsley or basil for added flavor. A side of crusty bread or a light salad complements the soup well.

For a bit of crunch, top your bowl with homemade croutons, or crunchy baked chickpeas. And for that extra special something, fry up some sliced vegan chorizo to place on top of the soup before serving. Happy eating!

    ❄️ Storage

If you have any leftovers from this delicious pea and kale soup, don't worry! You can store them in an airtight container in the fridge for up to 3-4 days.

    How to reheat

To reheat, simply pour the soup into a pot and warm it on the stove over medium heat, stirring occasionally until it's hot. If you find the soup has thickened too much, you can add a bit of vegetable stock or water to thin it out.

Alternatively, you can reheat the soup in a microwave-safe container. Use the high setting for about 2-3 minutes, stirring halfway through to ensure even heating.

Remember, this soup is best enjoyed hot, so make sure to heat it thoroughly before serving.

    Meal Prep

The soup also works well for meal prep. Prepare a batch at the beginning of the week, and you'll have a quick, easy, and healthy meal ready for those busy weekday nights!
