If you are unable to find La Ratte potatoes, you can substitute them for another type of fingerling potato or regular mini potatoes.

Wash and dry the fingerling potatoes, then slice them into evenly sized pieces.

Bought la Ratte for the first time to try this. You made it sound so delicious and I wasn't disappointed. Ultra smooth and creamy potato texture, wow! and the flavour oil was simply fab with them!
