If there’s a snack representing this year, then it would definitely be a rocky road! Don’t you agree? What you’ll need to make this White Chocolate Biscoff Rocky Road Recipe

Ingredients

  • Biscoff spread
  • dairy-free butter
  • vegan white chocolate
  • vegan marshmallows
  • Biscoff biscuits
  • Any additional crunchy additions you’d like to add

Equipment

  • 2 mixing bowls: 1 large, 1 medium
  • square cake tin (though you can also totally use a round one!)
  • baking parchment
  • spatula
  • fridge

How to make Vegan Rocky Road

To make this recipe, start by lining a 20×10 cm square pan (8×4 inches) with parchment paper. I use an adjustable rectangular baking tin, which is just perfect for these occasions! If you don’t have anything square or rectangular to hand, you can also use a round cake, however, be aware that this recipe makes 4 large pieces, which is not as big as a regular-sized cake tin. If in doubt, just double the recipe (I mean, who would mind, right?) πŸ˜‰

Next, melt your white vegan chocolate in a double boiler over low heat – this is a slow process, please don’t overheat the chocolate as it can otherwise begin to burn and harden, and that’s not what we can work with. Once melted add in the dairy-free butter and the Biscoff spread. Use a whisk to gently stir the mixture until everything is softened and combined. This will take a few minutes. 

Cut your vegan marshmallows into small chunks and place them into a large mixing bowl alongside your Biscoff biscuits. You can break up the biscuits into smaller pieces or leave them whole, this is down to your preference. I broke the majority of them into chunks and then left a few big pieces to add to the top afterwards. Pour the melted chocolate mixture on top and mix everything together with a spatula.

Transfer your sticky rocky road mix into the square baking tin and use a spatula to press it into all corners and also press it down slightly to ensure there are no big holes in your rocky road and everything is connected.

Add a  few additional marshmallow pieces and biscuits on top – totally optional of course – and transfer the mix to the fridge for at least 2 to 3 hours.

Once everything has firmed up, use a sharp knife to cut your rocky road into portion sizes. Keep the rocky road below 25 degrees, and for best results store it in the fridge. 

Simple swaps for this recipe

  • Biscoff-free: if you’re asking me the addition of Biscoff is the best thing about this recipe. However, if it’s not your thing and you’d simply like to make a vegan rocky road, then you can swap the Biscoff spread for your favourite smooth nut butter, such as peanut, almond or cashew butter. Swap the Biscoff cookies for your favourite vegan biscuits. 
  • Chocolate: you can swap out the white chocolate for any dark chocolate or vegan milk chocolate if that’s more down your street πŸ™‚
  • Crunchy additions: I’ve kept it simple for my rocky road with marshmallows and Biscoff biscuits to add some different textures (soft and crunchy), but you can add your favourite crunchy additions.

  • 30g dairy-free butter
  • 180g vegan white chocolate, melted
  • 100g vegan marshmallows
  • 75g Biscoff biscuits

Instructions
