    Next level vegan White Chocolate Biscoff Rocky Road Recipe - created with dairy-free white chocolate, vegan-friendly mini marshmallows, and smooth Lotus Biscoff spread plus crushed Biscoff biscuits.

    This Biscoff Rocky Road recipe is easy and delicious - and simply perfect as a snack or served as a delicious Biscoff dessert. It's overall a great recipe to bring to a party and to share with friends! And the best thing? It's a no bake recipe as well!

    This is one of my favorite Biscoff spread recipes and I'm excited to share it with you today.

    Where does Biscoff come from?

    A little fun fact on the side: I grew up on the Dutch/Belgian/German border, the so-called 'Rheinland'. This is the area speculoos and the Biscoff flavors originate from. I, therefore, like to think of myself as some form of 'Biscoff connoisseur' 😉

    It's a flavor that I grew up with and particularly close to my heart. Every cafe, restaurant and Co. in my hometown would serve Lotus Biscoff Biscuits along with their coffee, tea, and hot chocolate. As a kid, it was one of the most exciting things to land on the table alongside mum's cup of coffee (and you can be sure, I always gave her the puppy eyes to give me her biscuit, ha!)

    Long story short, if you love Biscoff as much as I do, you've come to the right place and these Lotus Biscoff Rocky Road bars are definitely right up your street!

    Ingredients & Notes

    For this rocky road recipe, you only need a handful of ingredients that you can easily get at a UK supermarket, such as Tesco, Asda or Morrisons. This recipe is easily adaptable to your own taste and you can swap out any of the crunchy fillings for your personal favorites!

    Here's everything you need:

    • Smooth Lotus Biscoff spread - the stuff that dreams are made of! I usually by mine from Tesco. Make sure to use their smooth spread for the best results!
    • dairy-free butter - I used Flora Plant Butter (the unsalted kind!)
    • vegan white chocolate - I love the flavor combination of melted Biscoff spread and white chocolate. It simply works together beautifully
    • vegan marshmallows - I used the ones from Dandies, you can get these at Asda and many other stores around the UK, but any vegan chewy marshmallows will do. You can even make your own Vegan Marshmallows at home!
    • Lotus Biscoff biscuits - these add a wonderful crunch to your Rocky Road!
    • any additional crunchy additions you'd like to add

    Equipment

    • 2 mixing bowls - 1 large heatproof bowl and a separate bowl in medium size
    • square tin - though you can also totally use a round one!
    • baking parchment - choose a non-stick option or - even better - a silicone baking mat, this will make removing your rocky road from the tin much easier
    • spatula - though you can also use the back of a spoon
    • fridge - to set your rocky road mixture

    Instructions (Step-by-Step)

    Step 1: Preparation

    Line a 20 cm x 10 cm square pan (8 inches x 4 inches) with non-stick parchment paper. I use an adjustable rectangular baking tin, which is just perfect for these occasions!

    Step 2: Melting the ingredients

    Melt the white chocolate in a double boiler over low heat. Once melted add in the dairy-free butter and the smooth Biscoff spread. Gently whisk until melted and smooth.

    Expert tip: Melting the chocolate is a slow process, please don't overheat the chocolate as it can otherwise begin to burn and harden, and that's not what we can work with.

    Step 3: Add your rocky road ingredients

    Cut your vegan fluffy marshmallows into small chunks (or leave them whole - down to you!). Place them into a large bowl alongside your crushed Biscoff biscuits. You can break up the biscuits into smaller pieces or leave them whole. I broke the majority of them into chunks and then left a few big pieces to add to the top afterward. Pour the melted chocolate mixture on top and mix everything with a spatula.

    Step 4: Assembly and setting time

    Transfer your sticky rocky road mix into the square baking tin. Use a spatula to press it into all corners and press down slightly to create an even layer. Make sure there are no big holes in your rocky road.

    Add a  few additional marshmallow pieces and crunchy Biscoff biscuits on top and transfer the mix to the fridge for at least 2 to 3 hours to set.

    Step 5: Slicing and serving the homemade rocky road

    Once everything has set and firmed up, use a sharp knife to cut your rocky road into portion sizes.

    Serving

    You can serve your rocky road as soon as it's set. Simply remove it from the cake tin and slice it into small pieces - you can keep these portion-sized or bite-size. I usually cut my sweet treats into bars of the size of a chocolate brownie.

    Storage Tips

    Store the rocky road pieces in an airtight container in the fridge for up to 7 days. You can also keep the rocky road at room temperature for a few hours as long as it stays under 25C. For best results, store it in the fridge.

    Possible Substitutions & Variations

    If you don't have all the ingredients to hand, here are a few recommendations for you.

    • Chocolate - this recipe will also work out with dark or milk chocolate
    • Biscuits - Instead of crumbly caramel biscoff biscuits you could also add crushed digestive biscuits for an extra crunch!
    • Marshmallows - replace the marshmallows with chewy fudge pieces
    • Cake tin - If you don't have anything square or rectangular to hand, you can also use a tray and make it a Biscoff traybake (or no-bake in this case!). Or simply use a round cake tin!

    Frequently Asked Questions

    Can I swap out the Biscoff in this Rocky Road recipe?

    If you're asking me the addition of Biscoff is the best thing about this recipe. However, if it's not your thing and you'd simply like to make a vegan rocky road, then you can swap the Biscoff spread for your favorite smooth nut butter, such as peanut, almond or cashew butter. Swap the Biscoff cookies for your favorite vegan biscuits. 

    Can I replace the white chocolate in this recipe?

    You can swap out the white chocolate for any dark chocolate or vegan milk chocolate if that's more down your street 🙂 Your Biscoff Rocky Road Bars will look slightly different, but be just as delicious! A favorite chocolate of mine to use in recipes such as this one is the one from NOMO.

    What to add to a Rocky Road?

    I've kept it simple for my rocky road with marshmallows and Biscoff biscuits to add some different textures (soft and crunchy), but you can add your favorite crunchy additions.

    Here are a few ideas of crunchy additions you can add to your vegan Rocky Road recipe:
    - chocolate buttons
    - mini-pretzels
    - nuts
    - cacao nibs
    - candy canes
    - peanut butter cups
    - freeze-dried fruit
    - chocolate bars
    - vegan-friendly rice crispies

    Note: Just make sure you keep a good ratio to the sticky Biscoff/butter/chocolate mix, so your Rocky Road still comes out in one piece at the end.

    Is Biscoff Vegan?

    Yes! So far, the vegan Lotus Biscoff products are: Lotus Biscoff Biscuits, Biscoff Spread, Lotus Biscoff Sandwich Biscoff Cream, and Lotus Biscoff Sandwich Vanilla. The Biscoff Ice Cream, Biscoff Chocolate and Lotus Biscoff Sandwich Milk Chocolate cream are not vegan, however.

    Does Biscoff have nuts?

    No, Biscoff spread does not have nuts and is in fact marked as 'nut free' on the Lotus Biscoff website. The Biscoff biscuits do not contain nuts either.

    Is Lotus Biscoff Spread gluten free?

    Sadly no. Wheat flour is used in all Lotus Biscoff products and they are therefore not gluten-free and unsuitable for coeliacs.

    Ingredients
      

    • 5 oz Smooth Lotus Biscoff spread (130 g)
    • 1 oz dairy-free butter (28 g)
    • 6 oz white chocolate (180 g) melted
    • 3.5 oz vegan marshmallows (100 g)
    • 2.5 oz Lotus Biscoff biscuits (75 g)

    Instructions
     

    • Start by lining a 20 x 10 cm square pan (8 x 4 inches) with parchment paper.
    • In a double boiler melt your white vegan chocolate. Once melted add in the dairy-free butter and Lotus Biscoff spread. Stir to combine and allow for everything to melt together.
    • Cut your marshmallows into small chunks and place them into a large mixing bowl alongside your Lotus Biscoff biscuits. You can break up the biscuits into smaller pieces or leave them whole, this is down to your preference. Pour the melted chocolate mixture on top and mix everything together with a spatula.
    • Transfer your rocky road mix into the square pan, using a spatula to press it into the corners. A few additional marshmallow pieces on top and transfer the mix to the fridge for at least 2 to 3 hours.

    Notes

    • Keep your rocky road in the fridge to keep it crunchy!
    • If you're asking me the addition of the smooth Lotus Biscoff Spread is the best thing about this recipe. However, if it's not your thing and you'd simply like to make a vegan rocky road, then you can swap the Biscoff spread for your favourite smooth nut butter, such as peanut, almond or cashew butter. Swap the Biscoff cookies for your favourite vegan biscuits.
