How to make Vegan Peanut Butter Pie

This vegan peanut butter pie is a perfect treat to share with friends and family – but let’s be honest: It’s also a gem keeping it all to yourself, ha! One of the things I like the most about it – besides its wonderful nutty flavour – is how quick it is to make! The pie crust is super quick and easy to whip up, and you can have your pie ready in as little as 30 minutes. 

First, start by preheating your oven to 190°C (374°F). 

Place your smooth peanut butter, granulated sugar, baking soda, vanilla extract, cinnamon, and salt into a large mixing bowl and combine everything with an electric whisk until well combined and smooth. This should take about 2-3 minutes. Once combined, gently fold in your plain flour (all-purpose) with a spatula.

Press about 2/3 of the dough into an 8-inch (20 cm) round pie tin, pressing it evenly against the bottom and sides of the dish. 

Place your white chocolate pieces and vegan marshmallows on top of the pie crust. Use the rest of the dough to cover the top of the pie. To do so, gently roll out little pieces between your fingers and place them on top until the pie is covered. No need to be overly detailed with it – this quick and easy, tasty pie is meant to have a rustic feel, and that’s exactly what makes it even more special! 

Once done, transfer the pie dish to your fully preheated oven at 190°C (374°F) and bake for 15-20 minutes in the middle of the oven until your pie is wonderfully golden on top. 

The pie is best served warm and delicious topped with a dollop of ice cream!

Extra tip: This pie is delicious using other nut butter such as almond butter or hazelnut butter as well! Simply swap it out for equal amounts and make sure to use smooth nut butter only.

  • 250g peanut butter
  • 140g granulated sugar
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • a pinch of salt
  • 140g plain flour
  • 80g vegan white chocolate
  • 100g vegan marshmallows

Instructions

  1. Start by placing your peanut butter, granulated sugar, baking soda, vanilla extract, cinnamon, and salt into a large mixing bowl and combine with an electric whisk. Once combined, gently fold in your plain flour.
  2. Press about two-thirds of the dough into an 8-inch baking tin.
  3. Place your white chocolate chance and marshmallows on top, then use the remainder of the dough and gently roll it out between your fingers and place it on top to cover the marshmallows and chocolate.
  4. Transfer to a preheated oven at 190 degrees for 15 to 20 minutes.
  5. Serve hot and enjoy!

Notes
