Description

Vegan Falafel Curry Recipe – a delicious, healthy and completely homemade curry perfect for an easy and filling vegan dinner!


Ingredients

Scale
  • 10 homemade falafels
  • 1 tbsp of rapeseed oil
  • 3 Tbsp of tomato puree
  • 1 tin coconut milk
  • 1 tsp ginger powder
  • 1 Tbsp garam masala
  • 2cm piece ginger root, minced
  • Fresh coriander
  • Salt to taste

Instructions

  1. Heat the oil on medium heat.
  2. Add the tomato puree, coconut milk, salt, ginger and garam masala. Stir and cook for 8/10 minutes.
  3. Transfer to a blender and blend till smooth.
  4. Pour the curry back to the pan and add the falafels. Gently stir and heat for another 5 minutes.
  5. Serve it with coriander and (if you like) rice. 😊
