  • Bananas - Make sure to use ripe ones for the best caramelization! Make sure they are still firm, that way they will caramelize beautifully without becoming mushy. Slice them in half lengthwise with a sharp knife.
  • Coconut Oil - For frying the bananas. It adds a nice tropical flavor and helps in caramelizing the bananas. You can substitute with another oil or dairy-free butter if needed, but coconut oil works best for that tropical touch.
  • Dark Brown Sugar - It gives that rich, deep flavor to the caramel sauce. You can also use light brown sugar, but dark is preferred for a more intense taste.

  • Whipped Coconut Cream - Whip it up for a dreamy topping! I used Nature's Charm Coconut Whipping Cream. Chill the can in the fridge overnight for the best results.
  • Toasted Coconut Flakes - Adds a crunchy, tropical garnish to the banana desserts. Toast them lightly for the best taste.
  • Vegan Vanilla Ice Cream - Serve with your favorite brand for a creamy, dreamy finish. You can also use another flavor if you're feeling adventurous (how about Vegan Pistachio Ice Cream or Homemade Biscoff Ice Cream!).

Recipe Preparation

  • Chill coconut cream overnight. Place your mixing bowl into the fridge roughly 30 minutes before whipping for best results.
  • Peel and slice bananas.

  • 1 spatula for flipping & stirring without breaking the bananas
  • 1 mixing bowl
  • 1 electric mixer for the whipped coconut cream

Ingredients
  

  • 4 whole ripe bananas sliced lengthwise
  • ¼ cup coconut oil (60 ml)
  • ⅓ cup dark brown sugar (70g)
  • ¼ cup dark rum (60 ml) or brandy
  • ½ teaspoon ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 cup vegan salted caramel sauce (200ml)
  • ½ cup walnuts (60g) roughly chopped
  • 13.5 fl oz coconut whipping cream (400 ml) chilled overnight
  • ¼ cup toasted coconut flakes (30g)

For serving:

  • vegan vanilla ice cream optional

Instructions
 

  • Make sure to chill the coconut cream overnight for the best results. Slice the bananas lengthwise and gather the rest of the ingredients.
  • Place a large skillet over medium heat. Add the coconut oil and let it melt completely.
  • Add the dark brown sugar, dark rum, ground cinnamon, and nutmeg to the melted coconut oil. Stir continuously until the sugar dissolves and the mixture becomes bubbly, about 3-4 minutes.
  • Gently place the sliced bananas into the bubbling caramel sauce. Cook them for 5-6 minutes on each side, until they are golden and caramelized. Carefully remove the bananas from the skillet and set them aside on a plate.
  • Reduce the heat to low. Stir in the salted caramel sauce and the chopped walnuts into the skillet. Mix until everything is well combined. Return the caramelized bananas to the skillet and coat them in the sauce.
  • Take the chilled coconut whipping cream and beat it with an electric mixer on high speed for about 3 minutes, or until soft peaks form.
  • To serve, top with a generous scoop of vanilla ice cream and a dollop of the whipped cream, then sprinkle with crunchy coconut flakes. Alternatively, serve in individual bowls.
