These 3-Ingredient Frozen Yogurt Protein Bars are super easy to prepare and perfect for refreshing, healthy summer snacking!

These Frozen Protein Bars are my one of my go-to treats on a hot day, when all I want is something cooling, refreshing and protein-packed. Plus, with just three simple ingredients - coconut yogurt, vanilla protein powder and fresh berries - these bars come together in just a few minutes! And they're both vegan and gluten-free.

The recipe for these protein bars is also easily adaptable, depending on what flavour you're after. The bars are super refreshing for those hot summer days and are perfect as snack or even a light breakfast! And they obviously help you reach your daily protein intake, so it's really a win-win-win situation.

Here's everything you need for these frozen protein bars:

  • Coconut Yogurt - Use plain coconut yogurt for the best texture and flavor. It acts as the creamy base for the bars and helps them freeze well. I love the plain coconut yogurt from Coconut Collaborative for recipes like these bars.
  • Vanilla Protein Powder - I like to use Vanilla Soy Protein Isolate. This protein powder gives the bars a sweet vanilla flavor and boosts the protein content. Feel free to use your favorite protein powder flavor if vanilla isn’t your top choice.
  • Berries and/or Fruit - Raspberries work wonderfully here, but you can experiment with your favorite fruits for different flavors. These add natural sweetness and a refreshing touch to the bars.

🔪 Equipment

  • Bowl or Blender - You can mix everything in a bowl with a spoon or whisk, or simply use a high-speed blender to ensure the mixture is smooth and creamy.
  • Freezer-proof container - A rectangular glass or plastic container works best.
  • Parchment paper - Essential for lining the container to prevent sticking.
  • Spoon or Whisk - To mix the ingredients thoroughly.

How to make Frozen Yogurt Protein Bars

Step 1: Combine Ingredients

Mix 200g coconut yogurt with 2 scoops of vanilla soy protein powder until it forms a thick batter.

Step 2: Prepare the Container

Line a freezer-proof container with baking parchment or wax paper. Scatter berries or fruit on the bottom.

Step 3: Add Batter

Fill the container with the yogurt protein mixture and smooth out the top. Add more fruit for decoration if desired.

Step 4: Freeze

Place the container in the freezer for 30 minutes.

Step 5: Serve

Remove from the freezer, let sit for 30 minutes to slightly defrost, then slice and enjoy.

Cut the frozen yogurt protein bars into even pieces and serve them straight from the freezer.

These bars are a refreshing snack for hot days or a light, protein-packed breakfast option. Pair them with fresh fruit or enjoy on their own!

Let them sit for a few minutes if they’re too hard to cut. Perfect for summer snacking!

Store any leftover individual Frozen Yogurt Protein Bars in an airtight container in the freezer. Place parchment paper between individual bars to prevent them from sticking together - this makes it way easier to enjoy individual bars!

💡 Tips & Tricks

  • Use High-Quality Coconut Yogurt - Opt for plain, unsweetened coconut yogurt for the best texture and flavor. This ensures the bars freeze well without becoming too icy.
  • Incorporate Protein Powder Slowly - When mixing the protein powder into the yogurt, add it gradually and stir gently with the back of a spoon to avoid clumping and achieve a smooth, thick consistency.
  • Line Your Container - Always line your freezer-safe container with baking parchment or wax paper. This makes it much easier to remove the bars once frozen and ensures clean, neat edges when slicing.
  • Allow to Slightly Thaw Before Slicing - The bars will be quite firm straight out of the freezer. Let them sit at room temperature for 5-10 minutes before slicing to prevent cracking and ensure easier cutting.
  • Customize Your Portions - Adjust the size of the bars to suit your needs. Larger cuts work well as a light breakfast, while smaller slices are perfect for a quick snack.

Vegan Frozen Yogurt Protein Bars

These Frozen Yogurt Protein Bars are a refreshing, high-protein snack that's perfect for summer! Made with only 4 ingredients: coconut yogurt, vanilla protein powder and juicy berries, they’re super simple to prepare. Plus, they're great as a light, protein-packed treat any time of day!

Equipment

  • 1 mixing bowl or blender
  • 1 freezer-proof dish
  • 1 sharp knife

Ingredients
  

  • 7 oz coconut yogurt (200g) use plain flavor
  • 2 scoops vanilla protein powder (approx 2oz / 60 g) e.g. vanilla soy protein isolate
  • 1 handful fresh berries e.g. raspberries

Instructions
 

  • In a bowl or a blender, combine 200g of coconut yogurt with two scoops of vanilla soy protein powder. Use the back of a spoon to mix gently. Continue stirring until the powder is fully incorporated and the mixture becomes thick and almost dough-like.
  • Line a rectangular, freezer-safe container with baking parchment or wax paper. Scatter a handful of berries or fruit across the bottom. This will create a fruity base for your bars.
  • Spoon the yogurt and protein mixture into the container. Smooth the top with a spoon to create an even layer. Add more berries or fruit on top if desired for decoration.
  • Place the container in the freezer. Allow it to freeze for at least 30 minutes or until firm.
  • Remove the container from the freezer. Let it sit at room temperature for about 5 minutes to slightly soften. Slice into bars and enjoy this refreshing, high-protein snack.

  • Serving - These Frozen Yogurt Protein Bars are best served slightly thawed to make slicing and eating easier. Let them sit at room temperature for about 5-10 minutes before serving. They make a refreshing snack or a light breakfast option and pair well with fresh fruit or a drizzle of nut butter for added flavor.
  • Storage - Store leftover bars in an airtight container in the freezer for up to 2 weeks. To enjoy, let them thaw slightly at room temperature for a few minutes before eating. If you don't intend to serve them all up instantly, simply use a sharp knife to cut the frozen yoghurt into smaller bars and freeze them separately.
