- 2 cloves garlic minced or grated
- 1 tbsp olive oil
For the sriracha sauce:
- ¼ cup sriracha sauce (60 ml)
- 1 tbsp maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ¼ teaspoon black pepper
- ½ lime juiced
For the lettuce wraps:
- 1 head lettuce
- 1 cup shredded carrots
- 1 cucumber diced
- 1 avocado diced
- 1 can sweetcorn (200g)
- 1 red bell pepper thinly sliced
- fresh cilantro for serving
- sesame seeds for garnish
For the Peanut Sauce:
- ¼ cup smooth peanut butter (60 ml)
- 2 tablespoon soy sauce
