    For the Jackfruit:

    • Jackfruit - Use tinned jackfruit for this lettuce wraps recipe and make sure to drain well to remove any brine, syrup or oil. I used tinned Jackfruit Confit by Nature's Charm for this dish - the confit is super soft, tender and flavorful, making it perfect for cooking. The jackfruit confit comes in oil, so make sure to drain well and squeeze out any excess oil. Catch the oil and use it for cooking - it packs a lot of flavor that you don't want to loose!
    • Aromatics - finely chopped onion and minced or grated garlic.
    • Oil - Use olive oil, sesame oil or the oil from the jackfruit confit to sauté onion and garlic.
    • Lime - Juiced for a fresh, tangy finish.

    For the Sriracha Sauce:

    • Sriracha hot sauce - For some tasty heat!
    • Maple syrup - Balances the heat with a touch of sweetness. Alternatively, use agave nectar or brown sugar.
    • Rice vinegar - Adds acidity to brighten up the flavors. Alternatively, use apple cider vinegar, or rice wine vinegar.
    • Spices - Smoked paprika, ground cumin, ground coriander and black pepper.

    For the easy Lettuce Wraps:

    • Lettuce - Use large leaves to hold the fillings. You can use iceberg lettuce, butter lettuce (butterhead lettuce), romaine lettuce, bibb lettuce or gem lettuce cups.
    • Carrots - Shredded for added crunch.
    • Cucumber - Sliced thinly for a refreshing bite.
    • Avocado - Sliced for a creamy texture.
    • Sweetcorn - Grilled for a smoky, sweet flavor.
    • Red pepper - I used red bell pepper, sliced for a crisp, sweet addition.
    • Cilantro - Freshly chopped for garnish. You can also add a sprinkle of green onions.
    • Sesame seeds - Sprinkled on top for extra texture.

    For the drizzly Peanut Sauce:

    • Peanut butter - Use smooth peanut butter for the base.
    • Soy sauce - Adds umami to the peanut sauce. You can also use coconut aminos to make it soy free.
    • Maple syrup - For a touch of sweetness.
    • Lime juice - Adds acidity to the peanut sauce.

    • Water - to thin the peanut sauce to desired consistency.

    Ingredients
      

    • 2 cans Jackfruit (400g) I used Nature's Charm Jackfruit Confit
    • 1 small onion finely chopped
    • 2 cloves garlic minced or grated
    • 1 tbsp olive oil

    For the sriracha sauce:

    • ¼ cup sriracha sauce (60 ml)
    • 1 tbsp maple syrup
    • 1 tablespoon rice vinegar
    • 1 teaspoon smoked paprika
    • ½ teaspoon ground cumin
    • ½ teaspoon ground coriander
    • ¼ teaspoon black pepper
    • ½ lime juiced

    For the lettuce wraps:

    • 1 head lettuce
    • 1 cup shredded carrots
    • 1 cucumber diced
    • 1 avocado diced
    • 1 can sweetcorn (200g)
    • 1 red bell pepper thinly sliced
    • fresh cilantro for serving
    • sesame seeds for garnish

    For the Peanut Sauce:

    • ¼ cup smooth peanut butter (60 ml)
    • 2 tablespoon soy sauce
    • 1 tablespoon maple syrup
    • 1 tbsp lime juice
    • 1 clove garlic minced
    • 1 teaspoon fresh ginger grated
    • water to thin

    Instructions
     

    • Gather all your ingredients. Dice the onion, mince the garlic, and drain the jackfruit confit. Make sure all your spices are measured and at hand.
    • Heat a large pan over medium heat and add a splash of oil. Sauté the diced onion and minced garlic until they are softened and aromatic.
    • Drain and rinse the jackfruit. Pat dry with paper towels. Using your hands or a fork, pull apart the jackfruit pieces to create a shredded texture. Remove any seeds and tough core parts if needed.
    • Add the drained jackfruit confit to the pan. Use your spoon to break it up into smaller pieces. This will help it absorb the flavors and give the dish the right texture.
    • In a small bowl, mix together the sriracha sauce, maple syrup, rice vinegar, smoked paprika, ground cumin, ground coriander, and black pepper. Pour the sauce over the jackfruit in the skillet. Stir well to coat all the pieces evenly. Cook for another 10-15 minutes, stirring occasionally, until the jackfruit is tender and has absorbed most of the sauce. Squeeze the juice of half a lime over the jackfruit mixture. Stir well and cook for an additional 2 minutes. Adjust seasoning to taste if needed.
    • In a bowl, combine peanut butter, soy sauce, maple syrup, lime juice, minced garlic, and grated ginger. Whisk until smooth. Add water as needed to reach the desired consistency.
    • Lay out the lettuce leaves on a large serving platter. Spoon a generous amount of the sriracha jackfruit onto each leaf. Top with shredded carrots, sliced cucumbers, avocado slices, grilled sweetcorn, and bell pepper slices.
    • Sprinkle the wraps with fresh chopped cilantro and sesame seeds for an extra burst of flavor and texture. Drizzle with the peanut sauce. Serve immediately and enjoy this spicy, tangy, and refreshing dish!
