Instructions
Gather all your ingredients. Dice the onion, mince the garlic, and drain the jackfruit confit. Make sure all your spices are measured and at hand.

Squeeze the juice of half a lime over the jackfruit mixture. Stir well and cook for an additional 2 minutes. Adjust seasoning to taste if needed.
In a bowl, combine peanut butter, soy sauce, maple syrup, lime juice, minced garlic, and grated ginger. Whisk until smooth. Add water as needed to reach the desired consistency.
Lay out the lettuce leaves on a large serving platter. Spoon a generous amount of the sriracha jackfruit onto each leaf. Top with shredded carrots, sliced cucumbers, avocado slices, grilled sweetcorn, and bell pepper slices.
