    • 1-2 baking trays lined
    • 1 electric hand mixer

    • 1 Ghost Cookie Cutter
    • 1 cooling rack

    Ingredients
      

    For the flax "egg":

    • 1 tablespoon ground flaxseeds
    • 2 tablespoon water

    For the sugar cookie dough:

    • 1 ¾ cups all-purpose flour (plain flour) 200g
    • ¼ teaspoon vanilla powder or 1 teaspoon vanilla extract
    • ½ teaspoon ground cinnamon
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 pinch salt
    • 7 tablespoon vegan butter, unsalted 100g
    • ¾ cup caster sugar 150g
    • 10 large nuts e.g. pecans, walnuts, almonds

    Instructions
     

    • Combine 1 tablespoon of flaxseeds with 2 tablespoons of water in a small bowl. Stir well and let it sit for a few minutes until it thickens and forms a gel-like consistency.
    • Set your oven to 170°C (340°F) and let it preheat. Meanwhile, line a baking tray with parchment paper to prevent sticking.
    • In a large mixing bowl, add 200g of plain flour, ¼ teaspoon of vanilla powder or 1 teaspoon of vanilla extract, ½ teaspoon of cinnamon, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and a pinch of salt. Sift these ingredients together to remove any lumps.
    • In a separate bowl, cream 100g of vegan butter with 150g of caster sugar using an electric hand mixer. Blend until smooth and creamy. Add the prepared flax egg to the mixture and mix until well combined.
    • Slowly add the dry ingredient mixture to the wet ingredients. Mix until a dough forms and all ingredients are well incorporated. Cover the dough and place it in the refrigerator for 20-30 minutes. This will make it easier to roll out and cut into shapes.
    • Once chilled, roll the dough on a lightly floured surface to about 3-4mm thickness. Use a ghost-shaped cookie cutter to cut out the cookies. Carefully lift each ghost's hands and place a nut (pecan, walnut, or almond) between them for decoration.
    • Place the shaped cookies on the prepared baking tray. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
    • Remove the cookies from the oven. Allow them to cool on the tray for a few minutes before transferring them to a cooling rack to cool completely.
