❤️ What's Great About this Recipe

  • Perfect for Halloween parties with their cute ghost shape!
  • Made with a simple vegan sugar cookie base - easy and delicious.
  • Nutty twist with pecans, walnuts, or almonds.
  • The flax egg keeps it vegan and acts as a great binder.
  • Hints of cinnamon give these cookies a warm, cozy vibe.
  • Fun and easy to make - great for baking with (adult) kids. 👻
  • No fancy ingredients needed, just pantry staples.
  • Perfect for sharing, and everyone will love them!

🌱 Ingredients & Notes

Here is everything you need for this recipe:

  • Flax "egg" - Made from flaxseeds and water, this acts as a binder in these vegan Halloween cookies. It helps hold the dough together just like a regular egg would.
  • All-purpose flour - This is the base of your vegan sugar cookies, so make sure you have enough!
  • Vanilla powder or extract - Adds a sweet, aromatic flavor to your ghost cookies. Vanilla extract is a great substitute if you don't have the powder.
  • Cinnamon - Gives your spooky cookies a warm, nutty flavor. It pairs perfectly with the pecans or other nuts.
  • Baking powder and baking soda - Both leavening agents help your cookies rise and become fluffy. Make sure they're fresh for the best results!
  • Salt - Just a pinch enhances the overall flavor of your Halloween sugar cookies.
  • Vegan butter - Adds richness and moisture to the dough. Ensure it's unsalted and at room temperature for easy mixing.
  • Caster sugar - This fine sugar blends easily into the dough, giving the cookies their sweet taste.
  • Large nuts (pecans, walnuts, almonds) - Use these for decor to create the cute ghost shapes. Pecans are especially nutty and work well here, but you can also use other nuts such as walnuts or almonds.

🔪 Equipment

Here is all the equipment you need to make this recipe:

  • Small Bowl - For mixing the flax egg.
  • Mixing Bowls - Make sure they are large enough to hold all your ingredients comfortably. You will need 2 bowls to mix wet and dry ingredients separately.
  • Baking Tray - Line with non-stick baking parchment.
  • Electric Hand Mixer - Use this to cream together the butter and sugar easily.
  • Sieve - Handy for sifting dry ingredients to avoid lumps.
  • Rolling Pin - Helps in rolling out the dough evenly.
  • Ghost Cookie Cutter
  • Oven - Preheat it to 170°C before you start shaping your cookies.
  • Cooling Rack - Allows the cookies to cool evenly after baking.

Equipment

  • 2 mixing bowls
  • 1-2 baking trays lined
  • 1 electric hand mixer
  • 1 sieve
  • 1 Rolling Pin
  • 1 Ghost Cookie Cutter
  • 1 cooling rack

Ingredients

For the flax "egg":

  • 1 tablespoon ground flaxseeds
  • 2 tablespoon water

For the sugar cookie dough:

  • 1 ¾ cups all-purpose flour (plain flour) 200g
  • ¼ teaspoon vanilla powder or 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 pinch salt
  • 7 tablespoon vegan butter, unsalted 100g
  • ¾ cup caster sugar 150g
  • 10 large nuts e.g. pecans, walnuts, almonds

Instructions

  • Combine 1 tablespoon of flaxseeds with 2 tablespoons of water in a small bowl. Stir well and let it sit for a few minutes until it thickens and forms a gel-like consistency.
  • Set your oven to 170°C (340°F) and let it preheat. Meanwhile, line a baking tray with parchment paper to prevent sticking.
  • In a large mixing bowl, add 200g of plain flour, ¼ teaspoon of vanilla powder or 1 teaspoon of vanilla extract, ½ teaspoon of cinnamon, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and a pinch of salt. Sift these ingredients together to remove any lumps.
  • In a separate bowl, cream 100g of vegan butter with 150g of caster sugar using an electric hand mixer. Blend until smooth and creamy. Add the prepared flax egg to the mixture and mix until well combined.
  • Slowly add the dry ingredient mixture to the wet ingredients. Mix until a dough forms and all ingredients are well incorporated. Cover the dough and place it in the refrigerator for 20-30 minutes. This will make it easier to roll out and cut into shapes.
  • Once chilled, roll the dough on a lightly floured surface to about 3-4mm thickness. Use a ghost-shaped cookie cutter to cut out the cookies. Carefully lift each ghost's hands and place a nut (pecan, walnut, or almond) between them for decoration.
  • Place the shaped cookies on the prepared baking tray. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Remove the cookies from the oven. Allow them to cool on the tray for a few minutes before transferring them to a cooling rack to cool completely.

Notes

  • Serving Suggestions: Serve these ghost sugar cookies on a festive Halloween platter. Add some spooky decorations around the plate for extra fun. Enjoy them with a warm cup of tea or coffee, perfect for sharing at Halloween parties or as an after-dinner treat. Kids will love the cute ghost shape and nutty flavor. Happy Halloween!
  • Storage: Store any leftover ghost sugar cookies in an airtight container. Keep them at room temperature for up to a week. If you want them to last longer, pop them in the fridge for up to two weeks.
  • Tips and Tricks:
    • Ensure your vegan butter is at room temperature for easy mixing.
    • Chilling the dough is crucial for easy rolling and cutting; don't skip this step.
    • For a stronger vanilla flavor, you can use both vanilla powder and extract.
    • If you don't have a ghost cookie cutter, you can shape the cookies by hand or use any other Halloween-themed cutter.
