Here are the main ingredients you’ll need to make this gnocchi lentil ragu:

  • Gnocchi: Store-bought potato gnocchi keeps this recipe quick and convenient. Check the package to make sure it is vegan, as some varieties contain milk or egg. Fresh, chilled or shelf-stable gnocchi can all work, but follow the cooking directions on the package.

  • Vegan Parmesan: This is optional, but it adds a salty, cheesy finish when serving. You can use a store-bought alternative or my homemade Grateable Vegan Parmesan.

You’ll need:

  • A large, deep skillet or sauté pan: Use a pan with enough room to simmer the ragu and eventually combine it with the gnocchi.
  • A large saucepan: For cooking the gnocchi in salted water.
  • A colander: To drain the cooked gnocchi.
  • A sharp knife and chopping board: For preparing the onion, garlic and mushrooms.
  • A wooden spoon or spatula: For stirring the ragu as it cooks.

🧑‍🍳 How to Make Gnocchi Lentil Ragu (Step-by-Step)

Step 1: Sauté the vegetables

Heat the oil in a large, deep skillet over medium heat. Add the onion and cook until softened and beginning to turn translucent.

Add the mushrooms and cook until they have released their moisture and started to brown. Avoid crowding or constantly stirring them; allowing the mushrooms to make contact with the hot pan helps develop more flavor.

Stir in the garlic and cook briefly until fragrant.

Step 2: Build the tomato base

Add the tomato paste, herbs and seasonings to the skillet. Stir everything together and cook for one to two minutes, allowing the tomato paste to darken slightly.

This short cooking stage removes the raw taste of the tomato paste and gives the finished ragu a richer flavor.

Step 3: Add the lentils and simmer

Pour in the tomatoes and vegetable stock, then stir in the drained lentils.

Bring the sauce to a gentle simmer and cook until it has thickened, stirring occasionally to prevent it from catching on the bottom of the pan. The finished ragu should be thick and spoonable but still loose enough to coat the gnocchi.

Add a splash of stock or water if the sauce reduces too quickly. If it remains watery, continue simmering it uncovered for a few more minutes.

Taste the ragu and adjust the salt, black pepper and other seasonings as needed.

Step 4: Cook the gnocchi

While the ragu simmers, bring a large saucepan of salted water to a boil. Add the gnocchi and cook according to the package directions.

Most gnocchi will rise to the surface when ready. Remove or drain them promptly so they remain soft and pillowy rather than becoming mushy.

Step 5: Combine and serve

Add the drained gnocchi to the skillet and gently fold them through the lentil ragu until evenly coated.

Allow everything to warm together for one or two minutes. Add a splash of gnocchi cooking water or vegetable stock if the sauce needs loosening.

For golden gnocchi: After boiling and draining, pan-fry the gnocchi in a little oil until lightly golden before folding it through the ragu.

Brown the mushrooms properly: Mushrooms release a considerable amount of water as they cook. Continue cooking until that moisture has evaporated and the mushrooms begin to take on some color.

Cook the tomato paste: Frying it briefly before adding the liquid deepens the tomato flavor and prevents the sauce from tasting raw.

Keep the ragu thick: It should cling to the gnocchi rather than resemble a soup. Simmer it uncovered for longer if there is too much liquid.

Adjust the sauce as it cooks: Lentils continue absorbing moisture, so add a splash of stock or water if the ragu becomes overly thick.

Don’t overcook the gnocchi: Drain it as soon as it is tender. Leaving it in boiling water for too long can make it soft and sticky.

Add the gnocchi shortly before serving: Once mixed into the sauce, it will gradually absorb liquid and soften further.

Reserve some cooking water: A small splash can loosen the sauce and help it coat the gnocchi more evenly.

Season at the end: Lentils, vegetable stock and vegan Parmesan can all contribute salt, so it's best to taste the complete ragu before adding more.

Make ahead

The lentil ragu can be prepared up to three days in advance. Allow it to cool, transfer it to an airtight container and keep it refrigerated until needed.

Reheat the sauce while cooking the gnocchi separately, then combine them immediately before serving. This gives the gnocchi a much better texture than storing it in the sauce for several days.

Storing leftovers

Store leftover gnocchi lentil ragu in an airtight container in the refrigerator for up to three days.

The gnocchi will continue absorbing some of the sauce as it sits, so the leftovers may be thicker than the freshly prepared dish. Where possible, store any unused ragu and gnocchi separately.

Reheating

Reheat the dish gently in a covered skillet over low to medium heat, adding a splash of water or vegetable stock to loosen the sauce. Stir occasionally until piping hot throughout.

Individual portions can also be reheated in the microwave. Cover the container and heat in short intervals, stirring between each one so the gnocchi heats evenly.

Freezing

The lentil ragu freezes well on its own. Allow it to cool completely, then freeze it in airtight containers for up to three months.

Defrost the sauce overnight in the refrigerator before reheating it on the stove. Prepare fresh gnocchi when serving, as previously cooked gnocchi can become very soft after freezing and thawing.

Do I need to boil the gnocchi before adding it to the ragu?

Ingredients
  

  • 1.5 lbs vegan gnocchi 700g, homemade or store-bought

For the ragu:

  • 2 tablespoons olive oil 30 ml
  • 2 stals celery finely diced
  • 1 whole carrot finely diced
  • 1 whole onion diced
  • 10.5 oz chestnut mushrooms 300g, sliced
  • 2 tablespoons tomato puree tomato paste
  • 1 14-oz can chopped tomatoes 400g
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika powder
  • 2 tablespoons balsamic vinegar 30 ml
  • 1 14-oz can brown lentils 8.5 oz / 240g drained weight, drained & rinsed
  • salt & pepper to taste

For serving:

  • freshly ground black pepper
  • fresh chives, parsley or basil chopped
  • vegan parmesan optional
  • chili flakes optional

Instructions
 

  • Heat the olive oil in a large, deep skillet over medium heat. Add the onion and cook until softened and translucent.   • Taste and adjust the salt, black pepper and other seasonings as needed.
  • Meanwhile, bring a large saucepan of salted water to a boil. Add the gnocchi and cook according to the package instructions. Once the gnocchi is tender and rises to the surface, drain it promptly. Reserve a small amount of the cooking water in case the sauce needs loosening.
  • Add the drained gnocchi to the skillet and gently fold it through the lentil ragu until evenly coated. Warm everything together for 1-2 minutes. Add a splash of reserved cooking water or vegetable stock if needed.
