This Rustic Butter Bean & Kale Soup is the kind of cozy meal that’s simple enough for a weeknight but still feels like something you actually look forward to eating. Creamy butter beans and cannellini beans simmer with tender potatoes and plenty of kale in a savory vegetable broth.

The best part might just be the homemade croutons on top. They’re golden, crunchy, full of herbs, and an excellent excuse to use up that slightly stale loaf sitting on the counter.

💛 Why You’ll Love This Soup

  • It’s hearty without being heavy. Beans and potatoes give the broth plenty of body while kale keeps everything fresh and vibrant.
  • The croutons really make it. Rustic chunks of bread baked with Herbs de Provence and vegan parmesan add loads of crunch and flavor.
  • It’s mostly pantry staples. Beans, potatoes, broth, bread, and a few everyday aromatics do most of the work.
  • It’s great for leftovers. The soup keeps well for easy lunches - just store the croutons separately so they stay crisp.

🫘 Two Kinds of Beans = Better Texture

Using both cannellini beans and butter beans gives this soup a little more variety than sticking to just one type.

Cannellini beans are smaller and especially creamy once warmed through, while butter beans are larger and have a soft, almost buttery texture. Together with the potatoes, they make the soup feel substantial without needing cream or any complicated thickening tricks.

There’s no need to cook the beans for ages since they’re already cooked. Add them once the potatoes are tender and let them simmer just long enough to heat through and absorb some of the broth.

🥖 Don’t Skip the Herb Croutons

The homemade croutons are what take this from a simple bean soup to something a little more special.

Rip rustic bread into uneven bite-sized pieces, then toss with olive oil, Herbs de Provence, and vegan parmesan before baking until crisp and golden.

Ripping rather than neatly cubing the bread is worth it here. The rough edges catch more seasoning and give you a mix of extra-crunchy corners and slightly softer centers.

Day-old bread is perfect, so this is also a great way to use up a loaf that’s past its prime.

And definitely keep the croutons separate from any leftover soup - once they sit in the broth, that crunch disappears pretty quickly.

🥬 Getting the Kale Just Right

Add the kale towards the end of cooking, once the potatoes are already tender and the beans have gone in.

It only needs a few minutes to soften into the soup. You want it tender enough to eat comfortably but still green and with a little texture left.

Curly kale works really well here because it holds its shape nicely, but you could also use another sturdy leafy green if that’s what you have.

🍽️ Ways to Serve It

This soup is already a complete meal once you add a generous handful of those crispy croutons, but a few simple toppings make it even better.

Try it with:

  • Extra vegan parmesan
  • Chopped fresh parsley
  • A drizzle of good extra virgin olive oil
  • Freshly cracked black pepper
  • Extra herb croutons - always extra croutons!

If you want something alongside, a simple green salad or an extra slice of crusty bread works perfectly.

💡 Romy’s Recipe Tips

  • Cut the potatoes fairly evenly. Similar-sized pieces will cook at roughly the same rate so you don’t end up with some falling apart while others are still firm.
  • Wait until the potatoes are tender before adding the kale. The greens only need a short simmer at the end.
  • Use slightly stale bread for the croutons. It dries and crisps particularly well in the oven.
  • Keep leftover croutons separate. Store them in an airtight container at room temperature and add them to each bowl just before serving.
  • Season at the end. Vegetable broths and vegan parmesan vary quite a bit in saltiness, so taste the finished soup before adding extra salt.

❓ Frequently Asked Questions

Can I use just one kind of bean?

Absolutely. You can use all butter beans or all cannellini beans if that’s what you have. The mix gives you a little more variation in texture, but using one type won’t fundamentally change the soup.

Can I use a different type of kale?

Yes. Curly kale works especially well, but Tuscan/lacinato kale is also a good option. Remove any particularly tough stems and roughly chop the leaves before adding them to the soup.

Can I use spinach instead?

You can. Spinach is much more delicate than kale, so stir it in right at the end and cook only until wilted. The finished soup will have a slightly softer texture, but it’s an easy substitute.

Can I make the soup ahead of time?

Yes. The soup is great for meal prep and can be made several days ahead. Keep the croutons in a separate airtight container and only add them when serving so they stay crunchy.

Can I freeze butter bean and kale soup?

Yes. Allow the soup to cool completely, then freeze it in an airtight container for up to 2 months. Thaw overnight in the refrigerator and reheat gently on the stove or in the microwave. Make the croutons separately rather than freezing them in the soup.

What can I use instead of Herbs de Provence?

An Italian herb blend works well, or use a simple mixture of dried thyme, rosemary, and oregano. The exact flavor will be a little different, but you’ll still get those savory herb-packed croutons.

🧊 Storage and Reheating

Store leftover Butter Bean & Kale Soup in an airtight container in the refrigerator for up to 4 days.

Reheat it gently on the stovetop over medium-low heat or microwave individual portions until piping hot. If the soup thickens in the fridge, simply add a small splash of vegetable broth or water while reheating.

Store the croutons separately in an airtight container at room temperature and add them just before serving.

Equipment

  • Large saucepan or soup pot
  • Baking Sheet
  • mixing bowl

Ingredients

For the Soup:

  • 2 tablespoons olive oil 30 ml
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 medium potatoes diced
  • 4 cups vegetable broth 1 liter
  • 1 14-oz can butter beans 400g, drained and rinsed
  • 1 14-oz can cannellini beans 400g, drained and rinsed
  • 3.5 oz curly kale 100g, roughly chopped
  • salt and black pepper to taste

For the Herb Croutons:

  • 5 oz rustic bread about 150g, torn into bite-size chunks
  • 2 tablespoons extra virgin olive oil 30 ml
  • 1 tablespoon Herbs de Provence
  • 1 tablespoon vegan parmesan

To Serve (optional):

  • fresh parsley chopped
  • vegan parmesan grated
  • extra virgin olive oil drizzled
  • black pepper freshly cracked

Instructions

Make the Herb Croutons

  • Preheat the oven to 350°F (180°C).
  • Add the torn bread to a large mixing bowl. Drizzle with olive oil and add the Herbs de Provence and vegan parmesan. Toss until the bread is evenly coated.
  • Spread the bread pieces in a single layer on a baking sheet. Bake for 10-12 minutes, tossing once halfway through, until golden and crisp. Set aside.

Make the Soup

  • Heat the olive oil in a large saucepan or soup pot over medium heat. Add the onion and cook for 3-4 minutes, until softened and translucent.
  • Add the garlic and cook for another 1 minute, stirring frequently.
  • Add the diced potatoes and vegetable broth. Bring to a gentle boil, then reduce the heat and simmer for 10-12 minutes, or until the potatoes are fork-tender.
  • Stir in the cannellini beans, butter beans, and chopped kale. Simmer for another 5-7 minutes, until the beans are heated through and the kale is tender.
  • Season with salt and black pepper to taste.
  • Ladle the soup into bowls and top generously with the herb croutons. Finish with fresh parsley, vegan parmesan, a drizzle of olive oil, or freshly cracked black pepper if desired.

Notes

  • Beans: You can use all butter beans or all cannellini beans instead of a mixture if preferred.
  • Kale: Curly kale works well because it holds its texture in the soup. Tuscan/lacinato kale can also be used. If substituting spinach, add it right at the end and cook only until wilted.
  • Croutons: Slightly stale bread works especially well. Tear the bread rather than cutting it into even cubes for more crispy edges and texture.
  • Storage: Store leftover soup in an airtight container in the refrigerator for up to 4 days. Keep the croutons in a separate airtight container at room temperature so they stay crisp.
  • Freezing: The soup can be frozen for up to 2 months. Thaw overnight in the refrigerator before reheating. Do not freeze the croutons in the soup.
  • Reheating: Reheat gently on the stovetop or in the microwave until piping hot. Add a splash of vegetable broth or water if the soup has thickened during storage.
