  • 18 oz vegan ravioli 500g
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 15-oz can pumpkin puree 425g
  • 1 cup vegetable broth 240 ml
  • ¼ cup unsweetened plant milk 60 ml, almond or oat
  • 2 tablespoons nutritional yeast
  • 1 tablespoon fresh sage leaves chopped
  • 1 teaspoon brown sugar
  • ¼ teaspoon ground nutmeg
  • salt and pepper to taste

For serving

  • Bring to a gentle simmer, reduce the heat to medium-low, and cook for 10-12 minutes, stirring occasionally.
  • Stir in the apple cider vinegar. Season with salt and pepper.
  • Add reserved ravioli water one tablespoon at a time until the sauce reaches your preferred consistency.
  • Add the cooked ravioli and fold gently until evenly coated. Heat for 1-2 minutes.
