Instructions
Heat 1 teaspoon of olive oil in a cast iron skillet over medium-low heat. Add 120g of roughly chopped walnuts and fry them, stirring regularly for 5 minutes. Pour in 1 tablespoon of tamari soy sauce, 1 tablespoon of maple syrup, and ½ teaspoon of smoked paprika powder. Cook for an additional 2 minutes, then remove from the heat. Set aside.
In the same skillet, add 2 cloves of minced garlic and a handful of fresh spinach. Cook until the spinach is wilted. Remove from the pan and set aside for later.
Melt 1 teaspoon of vegan butter in the skillet. Arrange 2 large sweet potatoes, cut into ¼-inch slices, in a single layer. Sprinkle with salt and pepper. Cook the sweet potatoes for about 10 minutes, flipping regularly until they are tender and golden brown on both sides.
Reduce the heat and place 4-5 vegan cheese slices on half of the sweet potato slices. Top these with the walnut mince and spinach. Drizzle a small amount of water into the skillet and immediately cover with a lid to help the cheese melt.
Once the cheese has melted, top each loaded sweet potato slice with another sweet potato slice. Remove from the skillet. Garnish with fresh chives before serving.
