Super simple recipe for delicious vegan carrot cake mug cake. Ready in just a few minutes and created with plain flour, brown sugar, shredded carrot, and warming spices.
Add the flaxseeds into a small bowl and cover them with water, give it a quick stir then set aside for 10 minutes to soak.
In a medium-size mug, combine the plain flour sugar, and baking powder with the cinnamon and ginger powder.
In the meantime, combine the melted vegan butter with the linseed mix and the shredded carrots. Stir this with mix into the mug with the dry ingredients until well combined.
Set the mug into your microwave and microwave on a high setting for 90 seconds.
Enjoy your vegan carrot cake mug cake on its own or topped with a dollop of vegan vanilla-flavoured yoghurt. Simply divine!

Depending on your microwave you might need to slightly adjust the cooking time until your mug cake is done. It's best to test the mug cake with a toothpick - it's ready to enjoy it as soon as the toothpick comes out dry.
