Vegan Carrot Cake Mug Cake
When it comes to me personally, are you definitely had a long face with vegan mug cakes, creating them almost on a daily basis. They are simply a perfect little snack to satisfy a sweet craving after lunch and I love making these mug cakes because they are ready in just a few minutes and just as delicious as spending a few hours in the kitchen for an actual full-size cake.
Ingredients for this mug cake recipe
To make this vegan mug cake you only need a few simple ingredients:
- 3 tablespoon plain flour
- ¼ teaspoon baking powder
- 2 tablespoon brown sugar
- 2 tablespoon milled linseeds, also called flaxseeds
- a little water
- 2 tablespoon melted vegan butter
- ½ of a medium-sized carrot, finely grated
- ¼ teaspoon cinnmamonm
- ⅛ teaspoon ginger powder

Mug cakes are generally super quick and easy to make - and so is this one! In just a few steps, your carrot cake mug cake is ready to be enjoyed. Just to make sure you know everything that's involved, please read the entire recipe instructions first.
Step 1: Preparing the flaxseeds
Start by adding the milled linseed, also called flaxseeds, into a small bowl or container with a little water - just enough to be able to stir the flaxseeds. Put it aside for five minutes. During this time, the flaxseeds will soak up the liquid and create a thick and gel-like texture, which will act as our egg replacer in this recipe.
Step 2: Mixing the dry ingredients
In a medium-size mug, combine the plain flour sugar, and baking powder with the cinnamon and ginger powder.
Step 3: Combining the wet ingredients
In the meantime, combine the melted vegan butter with the linseed mix and the shredded carrots. Stir this with mix into the mug with the dry ingredients until well combined.
Step 4: Microwave
Set the mug into your microwave and microwave on a high setting for 90 seconds. Depending on your microwave you might need to slightly adjust the cooking time until your mug cake is done. It's best to test the mug cake with a toothpick - it's ready to enjoy it as soon as the toothpick comes out dry.
Personally, I love my mug cakes thick and gooey so I don't overcook them in the microwave. As all of the ingredients used in this recipe are vegan friendly you don't have to worry about salmonella.
