For the Dressing:

For the Crispy Baked Tofu:
1block Extra Firm Tofu400g / 14oz, drained and cut into bite-size pieces
100gPlain Flour¾ cup

100mlPlant Milkapproximately ⅓ cup + 1 tbsp

Instructions
Set the oven to 200°C (180°C fan). This ensures it is ready for baking the tofu and croutons later.
Cut the tofu into bite-sized pieces. In one bowl, mix the flour, garlic powder, paprika, salt, and pepper. In a second bowl, whisk together the plant milk and Dijon mustard. In a third bowl, place the breadcrumbs. Dip each tofu piece into the flour mix, then the milk mix, and finally coat it in the breadcrumbs.
Place the breaded tofu pieces on a baking tray. Drizzle them lightly with vegetable oil. Bake for 20 to 25 minutes until they are golden and crispy.
Cut the stale bread into small cubes. Toss them with a little oil and season with salt, pepper, or paprika if desired. Add them to the oven during the last 3 to 4 minutes of baking the tofu. Let them toast until crunchy.
In a blender or food processor, combine the vegan mayo, garlic (or garlic powder), lemon juice, and chopped capers. Blend until smooth and creamy. Adjust salt and pepper to taste.
Chop the lettuce and place it in a large bowl. Add the drained chickpeas. Toss with the dressing just before serving to keep the salad fresh.
Divide the salad mixture into portions. Top each serving with the crispy tofu and croutons. Serve immediately and enjoy!
