Pumpkin Spice Porridge

Deliciously creamy vegan pumpkin spice porridge recipe – full of seasonal flavours! Made with pumpkin puree and homemade pumpkin spice mix.

To create the creamy pumpkin spice porridge, first add your porridge oats to a non-stick saucepan over low to medium heat.

Next, add in the pumpkin puree - you can use both tinned and homemade pumpkin puree for this recipe.

Afterwards, carefully pour in the coconut milk and stir well to combine with the pumpkin puree and porridge oats.

Sprinkle in your spices and continue stirring to combine all ingredients evenly throughout the porridge Continuously stir until your porridge begins to thicken

Step 5

Add in the maple syrup, stir to combine and then  remove your porridge from the heat once it’s reached your desired consistency and creaminess. If too dry, add a little more coconut milk.

Step 6

Transfer the porridge to a breakfast bowl and start adding the toppings of your choice. I love to go with a mix of nuts, nut butter and homemade chia jam

Other great topping options are fresh fruit - such as banana - frozen or stewed berries, a dash of maple syrup and a piece of chocolate.
