This Veggie BBQ Skewers with Pineapple Curry Sauce Recipe is part of a paid collaboration with Appletiser.
Don’t these look fantastic?! This Veggie BBQ Skewers with Pineapple Curry Sauce Recipe is the perfect summer pleaser and the curry sauce gives the skewers a kick, so they don’t need any other seasoning apart from a little oil, salt & pepper.
I also love sprinkling sesame seeds on the top – but let’s be honest: If you’ve been following my blog for a while and have a good eye for detail, you can probably spot sesame seeds on most of my dishes, they are my secret weapon to any dish – I am simply addicted to adding the crunchy goodness on top of my dishes, I think the crunch simply adds an interesting note to the texture of my food.
Of course, the sesame seeds are optional, but I can only recommend that you try out adding them to your dishes.
Anyway, Summer is most definitely full-on here – just in case you didn’t get the memo 😉
One of my fondest childhood memories in summer are the countless family BBQs that we’ve had, with brimming temperatures during the day, sun umbrellas all over my parents’ garden and my dad firing up the grill in the early evening. It was just that typical summer scent in the air in my hometown as there were BBQs happening pretty much everywhere up and down the street, and my parents arranged at least once a week.
In my early 20s, I remember having BBQs with friends almost every day during the summer – yes, I am totally aware, that that was a little extreme, but I was young & simply liked loved having a BBQ (& wasn’t vegan back then!) I am sure most vegans have been there at some point in their past.
Even after going vegan & not having my own garden for the past few years (cause: hello London!), the smell of a BBQ takes me right back to those summer days!
Germany, where I grew up, is definitely big on summer BBQs – it only takes the BBQ aisles in the supermarkets alone to prove that. They are simply huge and there is also an entire shelf just filled with the most diverse BBQ sauces. I vividly remember all of the so-called ‘cocktail sauces & interesting flavours that came onto the table for each BBQ party, alongside grilled potatoes & grilled bread with herbal butter (one of my BBQ fave’s!)
One of the sauces that my mum always brought to the table was a fruity curry sauce, which I absolutely used to love. I am sure there were times where I’ve probably had more sauce than food on my plate – and who could blame me: that sauce was delicious! However, it was always a store-bought one and I actually can’t remember whether my mum ever attempted making it from scratch.
For the BBQ weather month of July, I am happy to have teamed up with Appletiser to bring you this BBQ recipe – inspired by this fruity curry BBQ sauce that I loved so much as a kid, simply because I do love a good challenge of re-creating the flavours of my childhood!
To create the fruitiness of this sauce I used pineapple, whose sweet, citrusy notes goes along just perfect with the rich curry flavour – and hey: by making this sauce from scratch, it actually contains 1-of-your-5 a day! And when you have a refreshingly cold Appletiser alongside, that makes 2 (I can physically hear them being ticked off my list ;))
A summer BBQ & an ice-cold Appletiser simply makes the most #perfectpairing to battle the summer heat!
Of course these days, there’s only plant-power coming onto my plate – and I love pairing the pineapple & curry sauce with these delicious veggie skewers. These allow you to add up for favourite veggies before adding them to the grill – in my case, that means: bell peppers, courgette, mushrooms & also some tofu that sneaked in between my veggie slices.
So set your Appletiser in the fridge, fire on the BBQ, and let’s get going with this recipe!

How to make Veggie BBQ Skewers with Pineapple Curry Sauce
Prepping your skewers
To start with you’ll want to wash and chop up your vegetables – and tofu if that’s part of your recipe (but it’s really up to you what you want to put on your skewers!).
Extra Tip: If you’re using mushrooms, wash them but don’t chop—unless you’re using portobello!— as they shink when they’re grilled.
Put your veggies on your skewer, mixing them up so they’re nice and colourful.
Grilling your skewers
Splash a little oil over the vegetables before putting them on your BBQ grill, or if you don’t have access to a garden then simply grill them in the oven for 10-15 minutes.
How to make the pineapple curry sauce
While you’re waiting for your skewers to cook, you can start getting your sauce ready by chopping up half of your pineapple, after you’ve taken the spikey skin of that is! Now put the pineapple into a high-speed blender, along with the rest of your ingredients and blend it on high speed until it’s smooth.
Once it’s ready, put it in a small bowl ready for dipping.
Ready to eat
Once grilled, remove the skewers from the oven or grill and serve with a little pineapple sauce drizzled on top!
Why not add more plant-power to your BBQ? I served mine with a side of mixed bean salad – just as beautifully colourful as the skewers and a perfect addition to any BBQ spread.

These delicious BBQ Skewers with Pineapple Curry Sauce are perfect for BBQs and summer snacks, especially with the gorgeous curry sauce!
- 1/2 of a medium sized pineapple
- 1 small onion
- 1 Tbsp curry powder
- 3 Tbsps coconut yogurt
- 1 tsp ginger powder (or use a 1/2 inch piece of fresh ginger, finely minced)
- a splash of soy sauce
- salt & pepper to taste
- Your favourite veggies! We used mushrooms, courgette, bell peppers & tofu for our tasty skewers
- Start by washing & chopping your veggies (& tofu if you add some to yours!) into bite-sized chunks. If you use mushrooms, simply wash them and do not chop them, as they shrink when they are grilled.
- Add the veggies to your skewers, nicely mix them up to create colourful skewers.
- Drizzle a little oil on top and place them on your grill. If – like me – you live in a London flat without garden, you can also place the skewers into your oven and bake them on the grill setting of your oven for about 10-15 minutes.
- In the meantime, start preparing your sauce by chopping up the pineapple (skin removed of course!).
- Add the pineapple to a high-speed blender alongside the remainder of the ingredients. Blend on high until smooth, then transfer into a small dish to use for dipping.
- Once grilled, remove the skewers from the oven or grill, and serve with a little pineapple sauce drizzled on top!
