With portions of Kale, Spinach, peas, basil, lemon, and fresh tomatoes, this one is definitely a good helper with getting those nutrients in - who would have known that pizza can be so healthy!
People seem to be divided when it comes to pizza bases that are not tomato sauce - I personally think they can be super tasty when done well. As I love a good pesto I decided to make a pesto-like base for my pizza here - but with a healthy twist to get my greens in for the day.
Ingredients
- ready-made vegan pizza dough - or make your own!
- 150g frozen peas, thawed
- 50g fresh spinach
- 50g fresh kale
- 30g basil leaves
- 2 tbsp olive oil
- 2 tbsp lemon juice
For the topping:
- a handful of cherry tomatoes
- basil leaves
- a sprinkle of vegan cheese
- 1 tbsp crushed pistachios for the topping
