Mayonaise is something I’ve first missed after going vegan – after all, the original is created with eggs, and when I went vegan back in 2014 there was no good replacement readily available in the UK (pretty much until Follow Your Heart hit the shelves years later!). Instead of sulking about now having a tasty vegan mayo available, I decided to figure out how to make vegan mayonnaise myself and enjoy some delicious homemade vegan mayo instead!
This recipe is also great to fall back onto if you’ve run out of vegan mayo at home, need some for a recipe and simply need a quick and easy way to get some into your kitchen.

How to make vegan mayonnaise from scratch
Creating vegan mayo is actually much simpler than you may think! For this vegan mayonnaise recipe, I’m only using 3 simple ingredients: plant milk (I usually go for soya), lemon juice, and olive oil (use the extra virgin olive oil kind!).
To make vegan mayonnaise from scratch, simply combine the plant milk aka soya milk with the fresh lemon juice in a blender at its highest speed. After about 2 minutes, slowly start adding the olive oil into the blender whilst it’s still running at high-speed. Most blenders should have an opening at the top for easy access, in case yours doesn’t have this, then simply stop the blender to add a little olive oil at a time.
Blend at high speed until your mayo forms – the mixture should thicken after a few minutes. How long this will take can vary depending on the individual blender, simply give it a few extra minutes if it’s still too liquid.
In the end, you can add any flavoring you like to your homemade vegan mayonnaise. A few things I love to add are garlic powder, salt and chilli powder, but you can also get creative and add any seasonings and dried herbs that you like. For the best results, I’d recommend only using dried herbs, not fresh ones unless you intend to use up the mayo instantly.

Ingredients
- 1/2 cup soy milk (125 ml)
- 1/2 cup olive oil (125 ml)
- 1 tbsp lemon juice (15 ml)
Instructions
- Simply mix ½ cup soy milk with 1 tbsp fresh lemon juice in a high-speed blender for about 2-3 minutes.
- Slowly add ½ cup olive oil and continue blending until you get white emulsification – this can take a couple of minutes depending on your blender type. Continue blending at the highest speed until you get there.
- Finally, blend in some seasoning such as salt and/or garlic powder. You can also add chilli powder or sauce and whatever herbs and spices you prefer.
