Yes, pancakes can be a great way to include protein in your diet. No? Well, then keep reading!
This pancake recipe is flour-free and mainly using protein powder to replace the flour. The yogurt & baking soda make the mix superfluffy, which I love the most about it!
Protein pancakes are great to keep you full nearly the entire day when having them as a breakfast and they are definitely my favourite go-to breakfast on the weekend! If it has to be quick, these are also perfect, as these can be premade and frozen – ready to be defrosted by your toaster in the morning 😉
What are your favourite pancake toppings? Tell me in the comments below!
1/3 cup protein powder
1/3 cup ground flaxseeds (I used OTE Supderfoods)
1/3 cup plant-based milk
1/4 tsp baking soda
1/3 cup yogurt
1. Simply blend all ingredients apart from the yogurt, then add the yogurt in last and mix well.
2. Let the ‘dough’ rest for 15 minutes, then give it another stir and add it to a lightly oiled pan in batches to make the pancakes (I recommend using coconut oil.
3. Assemble on a plate and add your favourite toppings – I’m totally up for plenty of different toppings each time I have these! (my banana boat breakfasts being one of my favourite!)
