Red Velvet Pancake Recipe

Happy Valentine’s Day everyone!

Yup, It’s that time of the year: Singles moaning in their Facebook statuses and couples posting cheesy love dedications for their s.o.

I think it is important to remember that there is no need to define your self-worth by whether you are in a relationship or not. Valentine’s day is for everyone – to show your appreciation for one another, but also for yourself.

So this Valentine’s Day just have yourself a great day and tell yourself all of the things that you love about yourself and don’t be shy!

And to give you some ideas of how you could treat yourself – here is an amazing breakfast recipe for Red Velvet Pancakes that I made the other day! Naturally sweet and refined sugar free 😉

Red Velvet Pancakes Valentine's Day Recipe

Ingredients

1 1/2 cups flour

1 tsp baking powder

1/4 cup beetroot juice

1/2 cup plant-based milk (e.g. soy milk)

1 Tbsp apple cider vinegar

1 pinch of salt

A little coconut oil for frying

Toppings of your choice

Method

1. Mix the plant-based milk with the apple cider vinegar and transfer the mixture to the fridge.

2. Sieve the flour and baking powder into a bit bowl. This will ensure that you will not have any clumps of flour or baking powder in your gorgeous creation. Add the pinch of salt to the mixture and roughly blend it in.

3. Take the milk/apple cider vinegar mixture out of the fridge and add in the beetroot juice. Slowly add this mix to the dry ingredients.  It is important that you blend all the liquids together before adding them to the dry ingredients to avoid clumps and uneven colouring of your pancakes. (It just makes it look much nicer in the end ;))

4. After blending everything let the mixture rest for about 10 minutes and stomp the bowl on the kitchen counter a few times before adding a spoon full of mixture to a small pan. This will release any air and prevent air bubbles in your pancakes, so that they become smooth af.

5. Once your pancakes are ready, stack ’em and top them with the toppings of your choice! I chose Creme Fraîche from Oatly, some Granola from the Department of Breakfast, maple syrup and coconut/almond butter from Pip&Nut.

A little tip on the side: I always make these stackable pancakes in a mini pan that I got from Ikea for a few £. It just gives them the perfect round shape each time and when it is time to flip the pancakes, I simply flip them into a bigger pan.

Ensure to have the pan on medium heat, so that the pancakes can fluff up without burning.

Of course it is down to you whether you choose to enjoy them yourself or share them – you are welcome to do both (we’re not judging here).

And while you are at it, do the same tomorrow, and the day after, and the day after that…

Valentine’s day is a good reminder, but it should not be the only day that we show appreciation for what we’ve got.
